What is organic?

One question a lot of people ask us — as though we’ll know the answer — is “what does organic mean?” Tough question, because it means different things to different people. To a few farmers at the Greenmarket at 116th St. and Broadway in New York City, it means growing crops without chemicals or pesticides. As they point out, though, the definition is changing in the eyes of the government.
